Ingredients
  

Main Ingredients

  • pasta penne, spaghetti, linguine – your choice
  • chicken boneless, skinless breasts or thighs
  • 3-4 cloves garlic minced
  • butter a small knob
  • olive oil a good drizzle
  • Parmesan cheese freshly grated preferred
  • Italian parsley chopped

Instructions
 

  • Bring a pot of salted water to a boil. Cook the pasta until al dente. Reserve 1 cup of pasta water and drain.
  • Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper. Cook for 5–6 minutes per side until golden and cooked through. Let rest and slice.
  • In the same skillet, melt butter and add a bit more olive oil. Sauté minced garlic for 30 seconds.
  • Add cooked pasta to the garlic butter. Toss to coat. Add reserved pasta water a little at a time if needed.
  • Stir in sliced chicken and Parmesan cheese. Toss again to combine.
  • Garnish with chopped Italian parsley and serve hot.

Notes

Use thighs for a juicier result and feel free to swap pasta shapes to suit your pantry.
